Anime I like
Inuyashsa
The first anime that got me into the medium.
Code Geass
I used to really, really like this show. I still do, but it's lost its luster in many ways. I recommend it if you enjoy that "shojo manga" character design, and like stories about highly intelligent boys on a vendetta.
Death Note
Possibly my favorite anime. Death note is a rare "cat-and-mouse" thriller about a boy trying control the world with his "death note", and genius detective trying to catch him.
Monster
Psychological thriller murder mystery. The Japanese LOVE their psychological thrillers...
Kakegurui
A fun show about a high-school that grades its students on how well they can gamble. Kind of a hilarious premise, really.
Bleach
A massive fantasy anime about Shinigami. When I stopped watching this anime, it was up to about 400 episodes. I have no idea if it's still going on.
The Meloncholy of Haruhi Suzumiya
I don't know how to really describe this one. It's about a girl that believes in the supernatural, and has friends with supernatural powers, but doesn't know that they do... Kinda strange.
Neon Genesis Evangelion
Most people even vaugely interested in anime know about this one. Extremely (to a fault) psychological robot anime.
Fafner in the Azure
Fafner is kind of a Evangelion rip-off, but is pretty good in its own right.
Welcome to the NHK
A great anime about modern problems that plauge modern day Japan (pyramid schemes, video game addiction, depression, hikikomori, suicide, etc). The show is extremely tactful, on-point, and humorous despite its dark subject matter.
Perfect Blue
Really creepy, and well done psychological thriller about girl who quit an idol group to become an actress, and her freaky stalker.
Claymore
Basically a demon slayer set in medieval Europe. Really bloody.
Kimetsu no Yaiba
Really visually stunning anime about demon slayers in the Taisho period of Japan. Similar to Claymore thematically.
Attack on Titan
Everyone should know about this anime by now. You've got to have at least seen a titan.
Yakusoku no Neverland
Scary anime about humanity being enslaved by an alien race that likes to...eat us as a delicacy. An institution of the children that are especially delicious tries to escape. The anime is not nearly as gory as it sounds. It's a very cerebrial thriller about escape. Really cool.
Ergo Proxy
Psychological Sci-Fi action. Kind of a cult-classic.
Princess Mononoke
A Miyazaki classic about a girl raised by wolves, a cursed boy on adventure to cure himself, and a feudal Japanese town destorying their local forest in the name of industry.
Akira
Akira is an old anime movie from the 80s. It is quite possibly what popularized the cyberpunk genre (either that or Bladerunner). The show is visually stunning. The story is...psychological.

There are many, many more. I'll update this list periodically...
